I have definitely sampled my share of gluten-free brownie mixes over the years, so I have to admit I didn’t expect a lot out of the Lillabee Fudgy Brownie Mix.  We were intrigued because the company is based in Colorado and so many fabulous gluten-free products have come out of that state over the last year.

All of their mixes are free of wheat, gluten, dairy, soy, oats and nuts. All of their ingredients are certified GMO-free and gluten free by their manufacturers.  They also randomly batch test all of their mixes with an ELISA test which will detect the presence of gluten down to 10ppm (parts per million).  Their product line consists of four mixes: Fudgy Brownies, Classic Yellow Cake, Anytime Muffins, and Perfect Pancakes/Waffles

Here is a little information about the company:

The seeds of what would become Lillabee were sown when its founder Indea Leo was diagnosed with a long list of food allergies in 2007. No longer able to enjoy her favorite desserts and breakfasts, Indea, a skilled and avid baker, was forced to recreate all of her favorite recipes to accommodate her new dietary restrictions. Over the subsequent years she teamed up with her entrepreneurial husband Jared Lovenduski, refined and perfected the recipes, created the Lillabee brand, and released the products to an enthusiastic public at the Boulder Farmers Market in April 2010.

The fudgy brownie mix has step-by-step instructions that are easy to follow.  One bag makes an 8 x 8 pan of brownies.  All we had to add was eggs, butter, vanilla extract (we also added a little almond extract too) and we threw in some Enjoy Life dairy/soy free chips.

The result was a scrumptious pan of brownies that baked up to look like cake, so very tall, but tasted like fudgy brownies. The brownies are so moist and have that crunchy layer on top that works together to create my favorite texture.  The chocolate chips and almond extract added another depth of flavor to the brownies.  The brownies are so rich with fudgy goodness that we are only able to enjoy small amounts at a time.  My mother-in-law was very impressed with the taste and texture and said they were indistinguishable as gluten free.

Ingredients: pure cane sugar, cocoa powder, white rice flour, sorghum flour, tapioca flour, sweet rice four, potato starch, arrowroot powder, sea salt, baking powder and xanthan gum.
